White

White tea is the least handled of all the tea styles. Made from unopened new buds and baby leaves, they are simply withered then dried, all the while experiencing a natural oxidation. The leaves tend to yield a pale yellow liquor when brewed, that has a fragrant bouquet of hay, a gentle sweetness on the palate and a mild finish – the perfect thirst quencher.

The young buds and leaves used for making white teas are relatively higher in antioxidants, as well as caffeine, than in older leaves.
